Thai Beef Lettuce Wraps with Nam Jim

We're not mincing our words when we say that Thai-style larb has to be one of the best meat salads going round. Tangy, sweet and waiting to be fulfilled with your desired level of spice, this simple meal is whatever you need it to be. You can serve it with noodles or rice and lettuce cups, as we have. You'll usually always find a cucumber in the mix and a peanut never goes astray. We've added extra nam jim sauce, because we can't stop dousing it over everything.

Cook Rice

Place rice and 310ml (1¼ cups) cold water in a medium saucepan over high heat and bring to the boil. Cover, reduce heat to low and cook for 15 minutes or until rice is tender. Cover and set aside until ready to serve. While rice is cooking, continue with step 2.

Brown Mince and Prepare Beans

Heat oil in a frypan over medium heat. Add mince and cook, breaking up any lumps with a wooden spoon, for 5–6 minutes or until golden brown. Trim beans and chop into bite-sized pieces.

Make Nam Jim

Juice lime. Rinse coriander and finely chop stems and leaves. Place lime juice, most of the chopped coriander (reserving some to serve), sweet chilli sauce and fish sauce in a small bowl and mix to combine.

Make Cucumber Salad

Roughly chop peanuts. Cut cucumber into 3cm pieces. Combine peanuts, cucumber and 1 teaspoon nam jim and stir to combine. Set aside.

Add Nam Jim

Add green beans and ½ the remaining nam jim to mince and cook, stirring, for 1–2 minutes or until sauce has reduced and beans are tender. Remove from heat.

Plate Up

Seperate lettuce leaves. Divide rice between bowls and top with beef. Serve with lettuce cups, cucumber salad and remaining nam jim.
