Smoky Buffalo Chicken and Bacon Wedge Salad with Ranch Dressing

Down on the ranch, this buffalo chicken salad is going to please until the cows come home. Smoky and certifiably finger-licken' with a dressing that is the right amount of sweet and tangy.

60g bacon

65g Greek-style yoghurt *

½ iceberg lettuce *

1 bunch radishes

1 cucumber

1 spring onion

1 bunch dill

Marinate Chicken

Place chicken in a bowl with 2 teaspoons smoky cumin and coriander blend and 2 teaspoons oil. Season with salt and pepper and toss to coat. Set aside to marinate while you continue with step 2.

Cook Bacon

Roughly chop bacon. Heat 1 teaspoon oil in a frypan over medium heat. Add bacon and cook, stirring frequently, for 2–3 minutes or until slightly caramelised. Remove from pan using a slotted spoon and set aside.

Cook Chicken

Add chicken to pan and cook, turning occasionally, for 8–10 minutes or until golden brown. Remove from pan and set aside. While chicken is cooking, continue with step 4.

Make Ranch Dressing

Place white wine vinegar, yoghurt, honey, remaining smoky cumin and coriander blend and remaining oil in a bowl. Season with salt and pepper and mix to combine.

Chop Salad

Chop lettuce into wedges. Chop radishes into wedges and dice cucumber. Thinly slice spring onion. Chop dill.

Plate Up

Divide lettuce between plates and pour over ½ the ranch dressing. Top with cucumber and radish. Slice chicken. Place on top and scatter with bacon, dill and spring onion. Serve with extra ranch dressing.
