Hot-Smoked Salmon Soba Noodle Bowl with Ginger Soy Dressing

Don't feel much like cooking tonight, but want to keep your clean-eating streak unblemished? We have just the thing. This fresh bowl of fabulousness gets the job done with just one saucepan of boiling water. The rest is just a chop, a stir, a flake and a toss for a healthy weeknight hero amped up with gingery niceness

Boil Water

Bring a saucepan of water to the boil in preparation for cooking the noodles. While water is boiling continue with step 2.

Prepare Ingredients

Rinse and slice radishes into half-moons. Finely slice spring onion. Cut broccoli into small florets.

Prepare Ginger Soy Dressing

Grate ginger. Place miso, sesame oil, rice wine vinegar, soy sauce, honey, most of the sesame seeds (reserving some to serve) and ginger in a bowl and stir to combine.

Flake Salmon

Remove skin from hot-smoked salmon and discard. Flake salmon into large pieces. Place radish, spring onion and 15ml (3 teaspoons) ginger soy dressing in a bowl and mix to combine.

Cook Soba and Broccoli

Cook soba noodles in boiling water for 3 minutes. In the final minute, add broccoli. Drain well and rinse under cold water to bring to room temperature.

Plate Up

Divide noodles and broccoli between bowls. Top with flaked salmon and radish. Drizzle with ginger soy dressing and sprinkle with reserved sesame seeds to serve.
