Hoisin Beef and Vegetable Fried Rice

This low-maintenance favourite accelerates dinner by taking a shortcut with microwavable rice. It's tossed straight from packet-to-pan with beef, veg and hoisin sauce for midweek mastery in 30 minutes. You can also add a fried egg, if you so desire.

Brown Mince

Heat oil in a large frypan or wok over medium-high heat. Add mince and cook, breaking up with a wooden spoon, for 5–6 minutes or until golden brown. While the mince is cooking, continue with step 2.

Prepare Vegetables

Dice carrot into 1cm pieces. Cut cabbage into 3cm pieces. Cut broccolini into 1cm pieces. Thinly slice spring onion, keeping white and green parts separate. Peel and crush garlic.

Add Vegetables

Add garlic and white spring onion to beef and cook, stirring, for 30 seconds or until fragrant. Add carrot, cabbage and broccolini and cook, stirring frequently, for a further 2–3 minutes or until softened.

Add Rice

Add rice to pan and use a wooden spoon to break up the grains and mix with beef and vegetables.

Add Sauce

Add hoisin sauce and soy sauce to pan and cook, stirring, for 1–2 minutes to coat rice in sauce.

Plate Up

Divide fried rice between bowls and sprinkle with green spring onion to serve.
