Crispy Salmon with Buttery Winter Greens

Prepare Vegetables

Pull kale leaves from stalks and tear into bite-size pieces, discarding stalks. Trim and halve broccolini. Peel and crush garlic.

Dust Fish

Season cornflour with ¼ teaspoon salt and a good crack of black pepper. Dust fish on all sides with cornflour.

Cook Fish

Heat oil in a frypan over medium heat. Add fish, skin-side down, and cook for 5 minutes. Turn and cook for a further 3 minutes or until just cooked. Remove from pan, set aside and keep warm.

Cook Vegetables

Return frypan to medium-high heat. Add broccolini and kale, cover with a lid, and cook for 2 minutes or until broccolini is tender but still retains some bite.

Add Butter

Remove lid from frypan, add butter and garlic and stir until all vegetables are coated and fragrant. Season with salt and pepper.

Plate Up

Cut lemon into wedges. Serve salmon with buttery greens and lemon wedges.
