Chicken and Mushroom Spaghetti

Taking out the trifecta of a good weeknight dinner, this mushroom and chicken spaghetti is filling with protein and pasta, delicious with a creamy mushroom sauce, and is ready in just 30 short minutes. It's a win to the power of three!

100g Swiss brown mushrooms

1 eschalot

1 bunch parsley

330g chicken tenderloins

150ml cream *

25g grated parmesan

60g mixed salad leaves

Cook Pasta

Cook spaghetti in a saucepan of salted, boiling water for 11 minutes or until al dente. Drain reserving 40ml (2 tablespoons) pasta cooking water. While the pasta is cooking, continue with step 2.

Prepare Ingredients

Thinly slice mushrooms. Peel and thinly slice eschalot. Pick parsley leaves from their stems and roughly chop. Slice chicken into thin strips.

Start Sauce

Heat oil in a large frypan over medium-high heat. Add mushroom, eschalot and a pinch of salt and pepper and cook, stirring, for 2–3 minutes or until softened.

Add Chicken

Add chicken to pan and cook for 3–4 minutes or until golden brown and almost cooked through. Add vinegar and stir to combine.

Add Cream

Add cream and reserved pasta water to sauce and bring to a simmer. Cook for 1-2 minutes or until reduced slightly and chicken is cooked through.

Plate Up

Add spaghetti and most of the parsley to frypan, toss until spaghetti is warmed through and coated with sauce. Toss salad leaves with your favourite dressing. Divide pasta between bowls and top with parmesan and remaining parsley. Serve with salad on the side.
