We’re going to talk you through that via the six easy steps on your recipe card once you’ve chosen your kangaroo meat recipe. So don’t worry too much. But it doesn’t hurt to have a heads up when you’re cooking with a new ingredient, so here’s a few good tips to know.
1. Kangaroo meat is really lean, which means it’s best served medium-rare.
2. Like all meat, it’s a good idea to bring it to room temperature before cooking.
3. If you’re stir-frying kangaroo meat strips, remember it cooks quickly, so have the pan hot and keep stirring, but don’t over-cook. It will be a little red inside, which is what you’re looking for.

The right kangaroo cut for the right dish is the best place to start. You’ll use loin and rump for the barbecue and frying pan, mince for meatballs and rissoles, and stir-fry strips for quick-cook dishes.

Bring the kangaroo meat out of the fridge at least 30 minutes before cooking. With steaks and loin cuts, it’s a good idea to pat them dry with a paper towel before cooking.

Once you have cooked a kangaroo meat steak or roast, set it aside to rest for five minutes to ensure the juices settle, making it nice and tender when you slice it.

What is the nutritional profile of kangaroo meat?

Yep, good question. So, as with most red meats, you’ll want to take it out of the fridge and bring it to room temperature before cooking. If you have time, that is. We get that weeknights are weeknights and sometimes that level of pre-planning just can’t happen. It won’t be a deal-breaker but it is best. Once you have cooked the kangaroo meat, let it rest for five minutes before tucking in.
